Manufacturing and Ingredients

A high degree of experience, coordination and dexterity is needed for the entire manufacturing process of the “Dresdner Christstollen” from the use of ingredients to the perfect baking time and the following storage process. Our Stollen are hand made and the dough is consisting of high quality ingredients and a secret spice blend. This special recipe, which gives the cake the extraordinary taste, is handed over from baker father to baker son for many generations and is a family secret.

At the beginning, selected high quality ingredients and a secret spice blend are mixed into a dough. Thereafter, they are sufficiently kneaded with a kneading machine or by hand, because the well balanced distribution of the ingredients is very important for the final stollen. The best preparation and strict order of the ingredients are crucial.

Now the dough gets its typical shape of the Christmas Stollen. Subsequently, the dough is placed on a plate and is baked for about 60 minutes in the oven with 230°C at the beginning and then with decreasing temperature at 180°C. If the Dresdner Stollen reaches the desired consistence, he will be removed from the oven and stored.

Ingredients of the Dresdner Stollen

  • Dresdner Christstollen - Raisin Stollen: wheat flour, sultanas, butter, water, sugar, succade (cedar fruit, glucose syrup, sugar, acidifier: citric acid), almonds sweet, clarified butter, yeast, decorating sugar (dextrose, wheat starch, salt fat), candied orange peel (bitter oranges, glucose syrup, sugar, acidifier: citric acid), lemon peel paste (sugar, lemon peel, flavouring extracts), overseas serum, whole milk powder, bitter almond, salt, mace flower.
    May contain traces of nuts, sesame and egg.

  • Almond Stollen: wheat flour, butter, almonds sweet (12,5 %), sugar, water, succade (cedar fruit, glucose syrup, sugar, acidifier: citric acid), clarified butter, yeast, decorating sugar (dextrose, wheat starch, salt fat), candied orange peel (bitter oranges, glucose syrup, sugar, acidifier: citric acid), lemon peel paste (sugar, lemon peel, flavouring extracts), overseas serum, whole milk powder, bitter almond, salt, mace flower.

  • Marzipan Stollen: wheat flour, sultanas, butter, marzipan (10%), water, sugar, succade (cedar fruit, glucose syrup, sugar, acidifier: citric acid), almonds sweet, clarified butter, yeast, decorating sugar (dextrose, wheat starch, salt fat), candied orange peel (bitter oranges, glucose syrup, sugar, acidifier: citric acid), lemon peel paste (sugar, lemon peel, flavouring extracts), overseas serum, whole milk powder, bitter almond, salt, mace flower.

  • Chocolate Chip Almond Stollen with coating consisting of 17% cocoa-based fat glaze: wheat flour, butter, almonds sweet (12.5%), cocoa-containing fat glaze (palm fat completely hardened, sugar, lean cocoa (17%), lactose, emulsifier sunflower lecithin, flavouring), chocolate drops (9.4%) (sugar, cocoa mass, cocoa butter, emulsifier: soya lecithin, flavouring: vanilla flavouring), sugar, water, succade (cedar fruit, glucose syrup, sugar, acidifier: citric acid), clarified butter, yeast, candied orange peel (bitter orange, glucose syrup, sugar, acidifier: citric acid), lemon peel paste (sugar, lemon peel, flavouring extract), overseas serum, whole milk powder, bitter almond, salt, mace.
